Corn Muffins – 1 dozen (PDF)
1 Cup Cornmeal
1 Cup All Purpose Flour
1 tsp Salt
3 tsp Baking Powder
¼ cup Oil – Extra Virgin Olive Oil
1 Cup Milk
1 Egg
⅛ Cup Honey OR ¼ Cup sugar
Mix together dry ingredients. Add wet ingredients, mix until blended. Optional: Fold in additional ingredients such as whole kernels of sweet corn, diced jalapeno, onions, or cheese. Scrape bottom and sides of bowl with spatula if needed to combine. Scoop into muffin tin (with liners). Sprinkle additional cornmeal on top. Bake at 400 degrees until golden brown and firm (approximately 8-12 minutes)
